Classic Buffalo Wings
Classic cayenne hot sauce, butter and vinegar.
Ingredients
- 2 lb chicken party wings, fully thawed
- 1 tbsp neutral oil
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1/2 tsp freshly ground black pepper
- 1/2 cup cayenne-style hot sauce
- 4 tbsp unsalted butter, melted
- 1 tsp white vinegar
- 1/4 tsp garlic powder
Directions
- Dry and season. Pat the wings very dry with paper towels. Toss with neutral oil, salt, garlic powder and black pepper.
- Air fry. Arrange the wings in a single layer in a 400°F air fryer, leaving space for airflow. Cook 10 minutes, turn the wings, then cook 10–14 minutes more until browned, crisp and at least 165°F internally.
- Make the Buffalo sauce. Whisk hot sauce, melted butter, vinegar and garlic powder until smooth and glossy.
- Finish the wings. Transfer the hot wings to a large bowl, add enough Buffalo sauce to coat, and toss immediately.
- Serve. Serve immediately with celery and blue cheese or ranch.
Air Fryer tip: For extra crunch, keep cooking 2–3 minutes after the wings reach 165°F, then sauce immediately.
Classic Buffalo tip: Use less sauce for maximum crispness; serve extra Buffalo sauce on the side.
Ingredients
- 2 lb chicken party wings, fully thawed
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1/2 tsp freshly ground black pepper
- Neutral frying oil, as needed
- 1/2 cup cayenne-style hot sauce
- 4 tbsp unsalted butter, melted
- 1 tsp white vinegar
- 1/4 tsp garlic powder
Directions
- Dry and season. Pat the wings completely dry. Toss with salt, garlic powder and black pepper. Let them stand while the oil heats.
- Heat the oil. Heat frying oil to 350°F in a deep fryer or heavy pot filled only to a safe level. Keep water, ice and wet utensils away from hot oil.
- Fry in batches. Carefully lower a small batch of wings into the oil. Fry 8–10 minutes, maintaining roughly 350°F, until deeply golden and at least 165°F internally. Transfer to a wire rack and let the oil recover before the next batch.
- Make the Buffalo sauce. Whisk hot sauce, melted butter, vinegar and garlic powder until smooth and glossy.
- Finish the wings. Let the fried wings drain for 1–2 minutes, then toss while still very hot with enough Buffalo sauce to coat.
- Serve. Serve immediately with celery and blue cheese or ranch.
Deep Fried tip: Do not overcrowd the fryer. A major temperature drop produces greasy, softer wings.
Classic Buffalo tip: Use less sauce for maximum crispness; serve extra Buffalo sauce on the side.

- 1 tsp kosher salt
- 1 tsp garlic powder
- 1/2 tsp freshly ground black pepper
- 1/2 cup cayenne-style hot sauce
- 4 tbsp unsalted butter, melted

- Dry and season. Pat the wings very dry. Toss with neutral oil, salt, garlic powder and black pepper, then arrange with space between every piece.
- Bake. Bake 25 minutes, turn every wing, then bake 15–20 minutes more until browned, crisp and at least 165°F internally.
- Make the Buffalo sauce. Whisk hot sauce, melted butter, vinegar and garlic powder until smooth and glossy.
- Finish the wings. Transfer the baked wings to a large bowl and toss with enough Buffalo sauce to coat.
- Serve. Serve immediately with celery and blue cheese or ranch.
