WING GUIDES
Fix the problem, not just the recipe.
Great wings are mostly technique. These guides explain the variables that matter so you can adjust any recipe to your kitchen.
Why your wings are not crispy
If the skin is soft, rubbery or wet, one of five things usually went wrong.
Too much surface moisture
Dry wings before seasoning. Moisture has to evaporate before browning can accelerate.
Too little airflow or space
Crowding traps steam. Air fryers need circulation; ovens need open pan space.
Temperature dropped
Deep fryers need time to recover between batches. Overloading cools the oil and softens the exterior.
Sauce went on too early
Wet sauce starts softening crisp skin immediately. Toss just before serving.
The wings sat too long
Steam keeps escaping after cooking. Serve fast and avoid covering hot wings tightly.
How many wings per person?
Use this as a practical starting point, then adjust for your crowd and sides.
For mixed flavors, split the total into at least two batches. If heat levels vary, make the hottest flavor a smaller portion unless you know the crowd.
Build a game-day wing bar
The easiest party setup separates cooking, saucing and serving.
- Cook in batches and keep finished wings uncovered or lightly vented.
- Use separate toss bowls for mild and hot sauces.
- Label sauces clearly.
- Put ranch, blue cheese, celery and napkins downstream from the wing trays.
- Keep a clean utensil for every sauce to avoid accidental heat transfer.
